  • pinch Asafoetida (hing)
  • 2 Cinnamon Stick (Dalchini)
  • 5 Cardamom (Elaichi) Pods/Seeds
  • 2 Bay leaves (tez patta)
  • 1/2 cup Homemade tomato puree
  • 1/2 teaspoon Ajwain (Carom seeds)
  • 1/2 teaspoon Kashmiri Red Chilli Powder
  • 1.5 teaspoon Fennel seeds (Saunf), grounded to make powder
  • 2 tablespoons Curd (Dahi / Yogurt), whisked
  • A pinch of Saffron strands
  • 1/2 teaspoon Dry ginger powder
  • A pinch of Mixed Spices (or Garam Masala)
  • 4 tablespoons Mustard oil
  • Salt, to taste
  • Coriander (Dhania) Leaves, for garnishing

The Dance of Flavors Begins:

  1. Golden Paneer: Heat mustard oil in a pan and fry rectangular paneer pieces until golden brown. After that take them out and soak them in warm water while you prepare the luscious gravy.
  2. Aromatic Base: In the same pan, sizzle asafoetida in mustard oil. Add the warmth of cinnamon, bay leaves, green cardamom, and the earthy notes of shahi jeera.
  3. Tomato Tango: Introduce tomato puree to the pan, followed by a vibrant blend of Kashmiri red chili powder and ginger powder. Let the flavors mingle and awaken.
  4. Fennel’s Embrace: Sprinkle in freshly ground fennel powder, adding a touch of sweetness and depth. Embrace the aromas as you pour in some of the paneer-soaked water, adjusting consistency as desired.
  5. Yogurt’s Creamy Waltz: As the mixture simmers, introduce whisked yogurt and a pinch of saffron, creating a luxurious, creamy base for the paneer.
  6. Paneer’s Grand Entrance: Gently add the softened paneer pieces to the simmering gravy, allowing them to soak up the exquisite flavors.
  7. Finale of Spices: Sprinkle garam masala over the dish, and garnish with fresh coriander leaves, adding a final touch of vibrancy.
